Standard Colorado requirements for every mobile food vendor at a public event.

Mobile Retail Food Establishment License from your local public health agency
Colorado Sales Tax License from the Department of Revenue
$1M general liability + $1M auto liability insurance with the market and venue named
Workers' comp if you employ staff
Fire suppression inspection (if your truck has cooking equipment)
Valid food handler certifications for every employee preparing or serving food
